As a small-scale producer, I have recently experienced the lack of cold storage units in the Wayne County area when I was looking for a place to store poultry. With the growing number of other small-scale producers in the area, there has been a huge influx of seasonal, fresh produce and meat products. Producers have the opportunity to maintain premium prices over a longer period of time by storing their products for times of low supply of similar products.
The Wooster area has thousands of square feet of empty space with infrastructure that could house walk-in freezer and refrigeration units. Given the appropriate space, a local entrepreneur could build the storage units and lease them to small-scale producers in the area who want to increase their window of time for selling fresh and frozen product. The required capital to start this business depends on the scale; small units could be installed for under $5,000 and could gradually grow as demand increases.
